Fuhgeddaboudit Chili

Something about paying less than five bucks for multiple meals just makes my friggin’ day. When it tastes like it costs much more than five bucks? I’d say that makes my friggin’ week. You might say I’m easy to please. This chili is mighty tasty and costs about $4. Total. Slam freaking dunk.

Because I have the taste buds of a roughly seven-to-eight-year-old-child, my chili has to be made with zero beans. I’m about as anti-bean as they come, so they stay far, far away from any meal I’m preparing. Dave, on the other hand, is a grownup and likes beans (blech), so I will sometimes accommodate the nasty request to add beans to a meal such as this. Of course, I have to make a separate portion to do so, because I’m not gonna have my meal contaminated with bean filth. No way Jose.

Ingredients:
1 lb. ground beef
2 cloves minced garlic
1 large onion
→ I don’t keep onions on hand, so I normally sub with 1-1 1/2 teaspoons onion powder
2 T chili seasoning
1 can (28 oz) crushed tomatoes
1/4 cup red wine vinegar
1 can chili (kidney) beans **optional**

1. Crumble beef in a large pot over medium-high heat. Add the onion and garlic until the meat is browned, then drain off any excess grease.
2. Add chili seasoning, tomatoes and vinegar, then stir until its evenly mixed.

3. Bring to a boil, then reduce the heat to low and let it simma’ down nah for an hour or so. This is where the “fuhgeddaboudit” part comes in. Chili gets better the longer it simmers. So if you’ve got more time to let it simmer, then just let ‘er go. Just make sure to stir occasionally to prevent it from burning and sticking to the pot.

**If you’re using canned beans, stir them in about 10-15 minutes before serving, as they only need to be heated.**

Add a dollop of Daisy sour cream and some shredded cheddar cheese on top, and this makes for the perfect meal for a chilly (No pun intended. Ok, maybe half a pun was intended.) evening. Plus it scores major bonus points in the leftover category. Let it sit overnight in the fridge and it gets even tastier.
