Garlic Roasted Chicken

This chicken recipe makes me and my tastebuds…tastebros.

Not only was this meal cheap (around $3 total. Woohoo for Kroger meat markdowns and cheap Aldi produce!), it was goooood.

Sorry for the not-so-spectacular photos. I was up to my elbows in chicken guts and didn’t want to break out the fancy camera.

Ingredients:

  • 4 cloves garlic, minced
    → I just use the pre-minced stuff, much easier
  • 1 tsp oregano
  • 1/2 tsp salt
  • 1 tsp chili powder
  • 1/4 tsp cumin
  • 2 tbsp olive oil
  • 1/2 cup chicken broth
  • 4 chicken leg quarters
  • Dash of black pepper

1. Heat oven to 425°.

2. Combine the garlic, oregano, salt, chili powder, cumin, and black pepper. Add olive oil and mix well. Use a mortar and pestle to make a paste consistency, or mash with a fork.

3. Wash chicken leg quarters and pat dry. Snip off any excess skin. Arrange the chicken pieces in a baking dish and pat the garlic mixture over each quarter. Pour 1/2 cup of chicken broth (part dry white wine, if desired) into the baking dish.

4. Bake for 40 to 50 minutes, or until juices run clear. Serves four. Or two with leftovers. We had two leftover leg quarters and are having it for dinner again tonight. Can’t beat having dinner two nights in a row for under three bucks!
